With the below specs in mind, which of the more recent macOS versions would be a good fit for this setup? I don't necessarily need the latest-and-greatest - if Catalina is the 'sweet spot' for this rig and Big Sur or Monterrey will bog it down too much, I'll be pretty happy just running Catalina. (CUDA Support require nVidia CUDA Driver).
